I once went on a kind of pilgrimage to Brittany linked site, in search of the salted butter caramels of Henri Le Roux, maker of legendary French sweets. Line a baking tray (approximately 20 30cm) with parchment paper and set aside with a sieve for later use. Pour the double cream into a small saucepan and place it over a low heat to warm gently.

When the temperature of the sugar and glucose liquid reaches 100C, swap the wooden spoon for a balloon whisk and whisk the mixture continuously as the caramel begins to thicken and change colour.
